Sugar is a well-known “Retarder” of concrete and is frequently used to aid increase setting times, particularly in emergency situations. However, it is preferable to use a commercial admixture with well-known qualities given by a reputable supplier. However, not all sugars are equally effective at delaying cement hydration. Sugars such as glucose, lactose, and raffinose are effective retarders. The use of sugar in concrete has no influence on the durability, absorption, or shrinkage qualities of the material.
